Chicken Enchilida Chili

Thank you so much Selena for this yummy recipe, it is so good, I hope you don't mind me sharing :)
 
1 can of chicken ( or meat off a rotisserie chicken)
1 pkg taco seasoning
1 can of pinto beans ( drained)
1can of black beans ( drained)
1 can sweet corn drained
1 can of green enchilada sauce ( I use green chili enchilada sauce)
1can cream of chicken soup
1can of petite diced tomatoes ( I like fire rosted with garlic

Heat and enjoy!
with sour cream is my favorite or
Cheese or chips

Chicken Alredo Roll ups

These were seriously AMAZING and so easy!!!! I 100% recommend these, they are one of our new favorites! 6 ingredients make for a super easy fast yummy dinner. So here's what you need...

9 lasagna noodles
2 ½ cups alfredo sauce
2 cups cooked, shredded chicken
(I just buy the cooked chicken at walmart and shred it while I am waiting for noodles to boil)

oregano
garlic salt
3 cups shredded Mozzarella
or cheddar mix 

 Spray an 8x8 pan with non-stick spray and pour ½ cup alfredo sauce, or just enough to cover the bottom of the pan. Boil 8-10 cups water in a large pan, cook lasagne noodles until al dente. (I usually cook 1 or 2 extra just because lasagna noodles always seem to break on me when I am stirring them.)
Now this is the important part, seriously do this part correctly or you will regret it! Drain and rinse the noodles with cold water to prevent them from sticking to each other. Then, lay out each noodle individually on some tin foil and blot dry with a paper towel.

 Preheat oven to 350
Spread about 2 Tbs. alfredo sauce over each noodle. (if there is too much sauce you will have a big mess on your hands!) Sprinkle oregano and garlic salt on top of sauce. Take 1/9 of the shredded chicken and spread it out evenly over each noodle. Add approx. 3 Tbs. cheese. To roll up, start at one end and roll the noodle over the toppings. You will need to lift the noodle a little to prevent squishing out the inside ingredients while rolling.
Place the roll-ups in the pan, one by one, seam-side down so they don't come undone. Once they are all in the pan, pour the remaining alfredo sauce over the top. Top with remaining cheese. Bake at 350 degrees for about 30 minutes, or until the cheese is completely melted on top.

A few of my favortie books

I say a few but I have so many :) I really like Mitch Albom, his books have really changed the way I think. I think everyone needs to read at least one of his books in their lifetime. My favorite is probably "the five people you meet in heaven" and of course "Tuesdays with Morrie" I also really like the Sookie Stackhouse Novels, I bought the last one that came out but I haven't been able to get into it, most likely because I'm not watching Alexander SkarsgÄrd in True Blood. I also like the Eragon books, yes I am a little bit of a nerd. The Harry Potter books are freaking classic and I will never get tired of them. Of course the Twilight books :) I am listening to the Chronicles of Narnia in between these scary suspense books and those are so good!! The Host by Stephanie Meyer was pretty good, it was different and I like different. At home I am currently reading Men are From Mars Women are From Venus together forever, I am only on chapter 3 but it is so good so far! I am sure there are many more I just can't think of right now.

Harvest

I just finished a book called Harvest by Tess Gerritsen. It was AMAZING, I am still thinking about it! It is about human organ harvesting and the organs of little orphans being sold on the black market to rich people. The main girl in it Dr. Abby Matteo is dating on of the other surgeons and she starts to ask questions and starts figuring out things aren't exactly what she thinks. They go to other countries and get these little boys, tell them they are going to be adopted in America, keep them on a boat in the middle of the ocean and when someone comes up needing an organ and has one of their blood types they take them and do the surgery on the boat and get the organ helicopter flighted to the person that needs it. It arrives and their is no trace of where the organ came from and who the donor was. Abby figures out one of her patients was third on the list and all of a sudden she was getting a new heart at midnight the next day and she couldn't figure out how or where the organ really came from. The patients husband paid 5 million dollars for his wife to get a 12 year old boys heart. I just can't imagine living in a world like this but I know things like this really happen and things much worse. It was such a good book, but it did scare me a little and opened my eyes. I totally recommend this book if you like suspense and not knowing what is about to happen next. 

Daddys little girl

The book I am currently listening to (yes listening, I listen to books at work) is Daddys little girl written by Mary Higgins Clark. I started it this morning when I got there and I only have 1 and 1/2 cds left out of 10 cds, and that should tell you how good it is! I freaking love it, I didn't want to get out of my chair today because I didn't want to stop by book. It is about these 2 sisters and one gets murdered, her sister finds her body and everyone thinks her boyfriend killed her. Well 22 years later the guy everyone thought killed her (Andrea) is out on parol and her sister Ellie is a investigative reporter and decided to write a book on how the guy is guilty. A lot of crazy things start happening, I don't want to give away too much but I can't wait to finish it tomorrow when I get to work. I don't usually like reading suspense/murder books but this one is so good, I can't seem to stop listening to it!

A little introduction

Ok 2 of my most favorite things in the whole world is food and books. A lot of people always asks for my recipes so I figured why not start a blog, also I love reading and I would like to remember what books I've read and why I liked them. So here is my attempt at doing a blog just for books and recipes. Jordan came up with my blog name Dinner & a book, so I figured I should try it out.
